Select mangoes that are free of bruises or dark pits. The color of the skin will not determine the ripeness, since different mango varieties have distinctive skin colors. Cup the fruit in your hand and if it has a slight give, it is ready to be consumed. If still hard on the outside, leave the mango at room temperature or wrap it in a paper bag to speed up ripening. Once the mango is ripe, move it to the fridge to slow down the ripening process.
